Stop Making Two Lunches: An Easy High-Protein, High-Fiber Lunch for Moms + Kids
There is something I have decided I simply do not have time for anymore:
Making separate “healthy” food for myself and completely different food for everyone else.
If I'm trying to eat more protein, get more fiber, and make better choices throughout the day, I need meals that fit into my actual life.
And preferably, everyone else can eat them too. 😂
That's why I love meals like these High-Protein Chicken Ranch Wraps.
They're simple. They're filling. They can be made ahead of time. They're easy enough to pack for work or school. And most importantly, they taste like a normal lunch—not something you're forcing yourself to eat because it's “healthy.”
Why Protein + Fiber Make Such a Great Lunch Combination
When I'm thinking about lunch, I don't just want something that's going to get me through the next 30 minutes.
I want something that actually feels satisfying.
That's where protein and fiber come in.
Protein is an important part of a balanced diet and helps support muscle maintenance and repair, while fiber supports digestive health and can help meals feel more satisfying.
The problem?
A lot of quick lunches don't give us much of either.
It's incredibly easy to grab something that's mostly refined carbohydrates, eat it quickly, and find yourself digging through the pantry again an hour or two later.
So instead of making lunch complicated, I've started thinking:
Where's my protein? Where's my fiber?
Then I build from there.
And this wrap makes that ridiculously easy.
High-Protein Chicken Ranch Wraps
Prep Time: About 10 minutes
Makes: 4 wraps
Perfect for: Work lunches, school lunches or easy meal prep
You'll Need:
2 cups cooked chicken, shredded or chopped
½ cup plain Greek yogurt
2 tablespoons ranch seasoning
½ cup shredded cheddar cheese
½ cup finely diced cucumber
½ cup shredded carrots
½ cup chickpeas, drained and lightly mashed
4 high-fiber tortillas
A handful of spinach, optional
Salt and pepper to taste
How to Make Them
This is almost embarrassingly easy.
Combine the chicken, Greek yogurt, ranch seasoning, cheddar, cucumber, carrots and mashed chickpeas in a bowl.
Give everything a good stir until the chicken is coated and the ingredients are evenly distributed.
Lay out your high-fiber tortilla and add a little spinach if you're using it.
Spoon the chicken ranch mixture into the center.
Roll.
That's it. Lunch is done. 🙌
If you're packing it for a child, slice the wrap into smaller pinwheels. Somehow cutting food into tiny circles makes it approximately 74% more exciting to children. 😂
The Secret Ingredient: Chickpeas
Before anyone says:
“My kids aren't eating chickpeas.”
Hear me out.
Mash them.
You don't need to leave a bunch of whole chickpeas sitting inside the wrap. Lightly mash them with a fork before mixing them into the chicken.
Once they're combined with the Greek yogurt, ranch, chicken and cheese, they become part of the creamy filling.
And they're an easy way to sneak some additional fiber and plant-based protein into lunch.
That's my favorite kind of nutrition hack:
The kind nobody needs to know is happening.
How Much Protein and Fiber Is in One Wrap?
This will depend heavily on the brands and exact amounts you use—especially your tortilla—but that's also where you can really customize this recipe.
Chicken and Greek yogurt provide a strong protein base, while chickpeas, vegetables and a high-fiber tortilla help increase the fiber.
Using the right ingredients, you can easily build a wrap containing approximately 30+ grams of protein and 8–12+ grams of fiber.
Check the nutrition labels on your specific ingredients if you're tracking your intake, because high-fiber tortillas in particular can vary dramatically from one brand to another.

Could you cook chicken breasts, let them cool, shred them and then make this recipe?

Pull the meat off.
Lunch prep just got considerably easier.
Healthy eating doesn't earn extra points for being difficult.
If buying pre-cooked chicken is what makes the difference between having a protein-packed lunch ready and grabbing whatever you can find at 1:30 in the afternoon...

Make It Once, Eat It Throughout the Week
Another reason I love this recipe is that you can prepare the chicken mixture ahead of time.
Make a container of the filling and keep it refrigerated. Keep your tortillas separate so they don't get soggy.
Then when it's time to pack lunches, assemble what you need.
For an adult lunch, make the whole wrap and pair it with some fruit.
For kids, turn it into pinwheels and add their favorite lunchbox sides.
You could pair it with:
Berries, grapes or apple slices
A cheese stick
Cucumbers or baby carrots
Greek yogurt
A handful of nuts for older kids, where appropriate
A simple piece of fruit
And suddenly you have a lunch that works for you AND them.
You Don't Need a Separate “Mom Diet”
This might be my favorite part.
Taking care of yourself doesn't have to mean eating sad salads while you make everyone else something delicious.
And eating more protein or fiber doesn't require a refrigerator full of specialty “diet” foods.
Sometimes it's just about making small changes to the meals you're already eating.
Use Greek yogurt instead of a heavier creamy base.
Add some chickpeas.
Choose a tortilla with more fiber.
Throw in some vegetables.
Make sure there's a solid protein source.
Little choices add up.
And they're much easier to maintain when the food still tastes good.
Make Lunch Easier This Week
If mornings are chaotic at your house, make the chicken ranch mixture the night before.
Tomorrow morning, pull out a tortilla, add the filling, roll it up and toss it into a lunchbox.
One for you.
One for the kids.
One lunch. Everyone fed.
That's the kind of wellness I'm interested in.
