Cowboy Caviar (without beans and corn): My Favorite Summer Recipe for Eating More Vegetables

There was a time when I thought eating healthy meant forcing myself to eat bland salads, cutting out all the foods I enjoyed, and counting down the minutes until my next meal.
The older I've gotten, the more I've realized something important: you don't have to starve yourself to feel good in your body.
In fact, I think the secret to living a healthy, sustainable lifestyle is much simpler than that.
Find foods that make your body feel good and eat more of them.
For me, one of those foods is cowboy caviar.
Now, before anyone comes for me, I know traditional cowboy caviar usually includes beans and corn. But because I have a sensitive stomach, I've created my own version that's lighter, fresher, and honestly perfect for hot summer days.
It's packed with vegetables, takes less than fifteen minutes to throw together, and somehow feels like a treat instead of "health food."
And to me, that's exactly what living a LYVLI lifestyle is all about.

My Summer Cowboy Caviar Recipe
This version skips the beans and corn and focuses on crisp, refreshing vegetables that are easy on the stomach.
Ingredients
1 package mini sweet peppers, diced
½ red onion, finely diced
1 cucumber, diced
2 tomatoes, diced
1 avocado, diced
Juice from 1–2 limes
Salt and pepper, to taste
Directions
Dice all of the vegetables and place them in a large bowl.
Squeeze fresh lime juice over the top.
Add salt and pepper to taste.
Toss everything together and serve immediately.
That's it.
It's simple, colorful, and somehow tastes even better after sitting in the fridge for an hour.
I love eating it on its own, scooping it up with chips, or serving it alongside grilled chicken during the summer.
Healthy Living Doesn't Have to Be Complicated
One of the biggest changes I've made over the past few years has been shifting my mindset around food.
Instead of constantly asking:
"What should I cut out?"
I've started asking:
"What foods make me feel my best?"
For me, that's fresh vegetables, foods that don't upset my stomach, and meals that leave me feeling energized instead of weighed down.
Because the truth is, your healthiest life isn't built through extreme diets or perfection.
It's built in ordinary moments:
Cutting up vegetables while your kids play outside.
Eating lunch on the patio.
Trying a new recipe.
Choosing foods that nourish your body.
